El objetivo de esta investigación fue caracterizar físico-químicamente el aceite extraído de la semilla de la palma de cumare (Astrocaryum chambira). El material vegetal utilizado fue recolectado en la vereda Caney-Restrepo, Meta, Colombia. Las semillas fueron sometidas a proceso de molienda y secado a 60°c durante 24h, luego mediante método soxhlet el aceite fue extraído con solvente orgánico (n-hexano) donde se evaluaron diferentes relaciones semilla: solvente y se estableció que la relación 1:30 semilla-solvente fue la que permitió obtener el mayor rendimiento (46,88)%. A través de la caracterización fisicoquímica se determinó: la densidad a 25°C (0,9171±0,003) g/ml, el índice de refracción a 40°C (1,4518±0,0004), índice de yodo (8,28±0,60) g I2/100 g aceite, índice de saponificación (246,66±0,69) mg KOH/g aceite, porcentaje de acidez (0,248 ±0,002)% e índice de acidez (0,694±0,006) mg KOH/g aceite. El perfil de ácidos grasos presentó mayor proporción de ácidos grasos saturados (91,6)% que de insaturados (8,3)%. Así mismo, el análisis mostró que el ácido láurico es el más abundante (48,6)%, seguido del mirístico (29,8)%, palmítico (6,7)%, oleico (5,7)% y linoléico (2,5)%. De acuerdo a los anteriores resultados se podrían determinar los posibles usos del aceite en la industria alimentaria y no alimentaria.

The aim of this research was characterize physicochemically the oil extracted from the seed of the palm of Cumare (Astrocaryum chambira). The plant material used was collected in the Caney-Restrepo, Meta, Colombia. Seeds were ground and drying (60°C for 24h), oil was extracted by soxhlet method with organic solvent (nhexane), where different proportions seed were evaluated: solvent and established that the proportion 1:30 that produced the highest yield (46,88)%. The physicochemical characteristics of the oil was determined: density at 25°C (0,9171 ±0,003) g/ml, refractive index at 40°C (1,4518 ± 0,0004), iodine index (8,28±0,60) g I2/100 g oil, the saponification index (246,66±0,69) mg KOH/g oil, acidity percentage (0,248%±0,002) and acid index (0,694±0,006) mg KOH/g oil. The fatty acid profile showed a higher proportion of saturated fatty acids (91,6)% than unsaturated (8,3)%. Likewise, the analysis showed that lauric acid is the most abundant (48,6%), followed for myristic (29,8)%, palmitic (6,7)%, oleic (5,7)% and linoleic (2,5)%.According to the above results could be determinated the possible uses of this oil in the food and non-food processing industry.
