A partir del diagnóstico sanitario y el plan de mejoramiento se realizaron las actividades planificadas con las cuales se redujo en un 98% las no conformidades encontradas en la visita del INVIMA buscando prevenir peligros fisicoquímicos y biológicos, evitar la contaminación cruzada y asegurar la calidad e inocuidad del producto terminado. La ejecución de los programas del plan de saneamiento facilitó el desarrollo estratégico y controlado de tareas de limpieza, desinfección en las instalaciones de la planta, garantizando un adecuado manejo integral de los residuos generados en las operaciones dando cumplimiento a la normatividad vigente. La implementación, seguimiento y control de las BPM, demostró la efectividad en cuanto a higiene personal, utilización de implementos como gorro, tapabocas, guantes, calzado antideslizante, indumentaria aseada, ausencia de joyas y uñas pintadas 4. Las condiciones climáticas en el almacén de materia prima en la planta han evidenciado temperaturas máximas de 36°C y humedad relativa de hasta 78% , el grado de humedad del café verde debe garantizarse durante la etapa de almacenamiento, el material de que esta hecho el saco o lona determina de forma directa la afectación del grano por la humedad del ambiente, si el aire puede entrar y salir de la bolsa, también lo hará la humedad, con lo cual se pone en riesgo la calidad del grano.
